Who did the work, you ask? Well, that's not very polite: you might as well ask rich people to explain in detail how they got their money. In this case the answer is forced labor by conquered peoples. A kinder view is that the conquered peoples came to believe that their labor was an act of faith offered as part of a spiritual undertaking. And the children of the builders? They remained in service to the estate, generation after generation. Enough to make you welcome the Spanish? Well, maybe not, but there's an argument to be made, isn't there?
